The harmonious blend of Cabernet Sauvignon, Merlot and Cabernet Franc make a balanced and well structured medium bodied red, the flagship of the Mike Weir Wine portfolio. Raspberries, cassis and dark chocolate meld together forming a savoury mouth feel while providing a plush tannic dry finish. The pleasing interplay between fruit, tannin and acidity with smooth rounded texture on the palate allows this wonderful Meritage to pair well with many dishes. Enjoy with beef, lamb, duck and aged cheeses.
Ageing: wine can be enjoyed and will continue to develop 2-5 years.
technical notes
The Cabernet Sauvignon, Merlot and Cabernet Franc were harvested in mid October exclusively from the magnificent vineyards of Château des Charmes in Niagara On The Lake. The low precipitation in 2007 , produced a vintage with intense and concentrated fruit flavours. Small batch fermentation with hand punchdown of the cap, was followed by 12 months barrel ageing in Allier and Troncais oak. The varietal composition of the cuvee is 63% Cabernet Sauvignon, lending to the tannic structure and backbone; 20% Merlot, contributing to the ripe fruit velvety flavour and texture; and 17% Cabernet Franc, adding to the fleshy round mouth feel.
